This has got to be the best patty pan squash recipe my family loves it and even the smaller kiddos enjoy it. It is simple and fast to make and is a great side dish or you can even make this a main dish. Yummy!
Simple Summer Sauté
Serves 2
2 tablespoons coconut oil
1 onion, chopped
6 to 8 patty pan squash (or 2 to 3 yellow squash)
2 garlic cloves, minced
2 teaspoons Italian seasoning
Sea salt, to taste
PREPARE: Add coconut oil to a hot sauté pan. Next, add onion and sauté until fragrant. Then add squash, garlic, Italian seasoning, and sea salt. Sauté for about 5 to 8 minutes until soft.
