Curried Kale Chips

Makes 2 servings

1 bunch kale, stems removed and leaves torn into 2-inch pieces

2 tablespoons melted coconut oil

1 teaspoon curry powder

Sea salt, to taste

 

PREHEAT THE OVEN: Preheat oven to 300 degrees Fahrenheit.

 

MIX THE INGREDIENTS: Ensure that your kale is completely dry before you begin. Next, add your kale to a large bowl and drizzle with melted coconut oil, curry powder, and sea salt. Toss until evenly coated. Transfer to a baking sheet and bake for 10 minutes. Remove from the oven and flip kale leaves over. Return to oven and continue cooking until kale is dry and crisp, usually 10 to 15 more minutes. Finally, remove from the oven and let cool completely. Store in an airtight container for up to 3 days.
