Summer Sauté with Brown Rice- a healthy brown rice recipe

Serves 2

2 tablespoons coconut oil

1 onion, chopped

6 to 8 patty pan squash (or 2 to 3 yellow squash)

2 garlic cloves, minced

Sea salt, to taste

2 mint sprigs

Brown rice 

 

PREPARE: First Prepare your brown rice and get that started because it takes 20 minutes for rice to cook. Click here for recipe for brown rice   Add coconut oil to a hot sauté pan. Next, add onion and sauté until fragrant. Then add squash, garlic, and sea salt. Sauté for about 5 to 8 minutes until soft. Top with chopped mint. Serve with Brown Rice
