I’m sure you hear a lot about coconut oil and you are asking yourself, “Why should I use coconut oil?”

Coconut oil got a bad rap for a long time – but finally, those days are over. Many thought that because coconut oil is hydrogenated, it would cause heart disease. Thankfully, doctors like Mary G. Enig Ph.D., an internationally known nutritionist, and biochemist, says that coconut oil is a true lifesaver for cardiovascular health. Studies show heart patients recover faster after they are fed coconut oil. I love her book Eat Fat Lose Fat

 

  But how is that possible?

 

The lauric acid in coconut oil is the same ingredient found in mother’s milk that gives babies their strong immune systems and allows them to fight off unwanted bacteria, candida, and viruses. Lauric acid is a disease-fighting ingredient, and it can be found right in coconut oil.

 

Coconut oil is perfect not only for people fighting off diseases and health issues but also for people who want to prevent health problems. Even though coconut oil is a saturated fat, it DOES NOT raise cholesterol levels in your body. In fact, coconut oil actually supports healthy cholesterol levels in your liver by producing high-density lipoprotein that promotes healthy hormone production. In tropical cultures where coconut oil is consumed daily, cholesterol levels are normal – unlike in the United States where we tend to have very high cholesterol rates.

 

Why is that anyway?

 

It’s because we don’t eat enough healthy fats that contain HDL, like the coconut oil, that help our liver remove excess cholesterol. Even though coconut oil is a saturated fat, it is a medium chain saturated fatty acid, unlike animal products that are long chain saturated fatty acid and increase cholesterol.

Coconut oil is made up of the following:

Caprylic acid (C-8)

Capric acid (C-10)

Lauric acid (C-12)(the most of any plant source)

Myristic acid (C-14)

86.5% saturated fatty acids

5.8% monounsaturated fatty acids

1.8% polyunsaturated fatty acids

All of these components make it the best Superfood oil for fighting off fungus, bacteria, parasites and candida: all those unwanted pathogens!

 Try This Delicious Raw Protein Treat!

 

 

Life is busy. I am always looking for ways to get nutrient-dense foods into my body. I love making protein balls because I can freeze them and then pack them for my on-the-go day. When I started using essential oils in my home and with my clients, I started feeling amazing. Oils can be used topically, inhaled or consumed by mouth.

I decided to add Peppermint oil to my protein balls, which is great for supporting digestion, to my favorite protein ball recipe. OMG, they are amazing.

 

Here’s my Slammin’ Raw Protein Ball Recipe (infused with peppermint essential oil!):

MINT PROTEIN BAR (Makes 8-12 bars or balls)

1 cup pumpkin seeds

½ cup sunflower seedsMINT PROTEIN BALLS

1 cup soft Medjool dates, soaked for 1 hour

¼ cup flax seeds

Pinch sea salt

2 tablespoons raw cacao powder

1 drop of peppermint essential oil (therapeutic grade)

 

MIX THE INGREDIENTS  in a food processor, combine the pumpkin seeds and sunflower seeds. Pulse for 30 seconds to 1 minute. Place the ground seeds in a separate bowl and set aside. Add the soaked dates to the food processor and process until there are no large pieces. When the mixture resembles dough, stop the food processor and stir with a spoon.

Add in the ground pumpkin and sunflower seeds back to the food processor along with the flax seeds, sea salt and cacao powder. Pulse together all the ingredients again until everything is well incorporated and can stick together.

DO NOT OVERMIX!

 

These are great for the summer when people can get digestive upset from the summer heat.

It is important to consume foods that support digestion and reduce the summer heat, which can lead to headaches, fatigue, and digestive upset.
